In our quest for good Q, we had
to come up with a way to keep track of all the places we'd been to.
Here it is. Simple, yet definitive enough to where when our aging
brains fail us, we can go back to our notes. We want to share our
findings with you, get your feedback, and hopefully create a place to
where people can go online for the latest and greatest in Texas BBQ.
We like to consider ourselves simply
"purveyors of knowledge in the fine smoked meat category."
We judge
each place based on 6 categories: Ribs, Brisket, Sausage, Sauce, Sides
(we try to stick to the staples - BBQ beans, slaw, or potato salad), and
Atmosphere. We judge on a scale of 0-5 (0 being the worst and 5 the
Best). Generally we will give place 2 visits to prove itself if
needed. We then take total scores of the 6 categories and come up
with an overall average score for that location. We believe these
6 categories to be essential parts of a good BBQ restaurant. If a
place doesn't have 1 of the 6, then they get a score of 0 for that
particular category. (Sorry Kreuz. No sauce = no bueno in
our book.) A 2.5 score is average, run of the mill BBQ, nothing to
write home about but not a bad place to eat. We feel by rating
each category it allows us to rank each location based on the
6 categories individually (i.e., which place has the best ribs).
We will update the scores if necessary after our return visits.
The idea is that consistency is important. A lot of the bad places
today were once good and vice-versa. We want to let you know if a
place has shown a significant rise or decline in quality. At the
same time, we recognize that even the greatest of smokers have good and
bad days. With this in mind, we're not going to knock a place
based on just one visit. We choose which restaurants to
visit based on a number of things. We read a lot of reviews and
will sometimes just visit a place based on what another "BBQ junkie" has
said. Other times we may go somewhere just because it caught our
eye as we drove by. So if you know of a good one, please let us
know.
We welcome all comments. We're doing this because we're weird &
strung out on BBQ. We are determined to scour the great state of Texas
in search of the best simply because, well, we need it...........bad.
